Puffed or popped as it is sometimes called Jasmine rice is perfect for achieving the classic flavor and aroma elements of Thai Hom Mali (Jasmine) Rice, delivering subtle and delicate notes to the product. Excellent for using as a sprinkled crunchy garnish topping on stir-fry and salads.

For brewers, Puffed Jasmine is pre-gelatinized in the puffing process, so the starches are readily hydrated and easily incorporated into the mash. Milling is highly recommended so that the gelatinized starches in these products will be exposed to the diastatic enzymes in the base malt that are responsible for conversion from starch to sugar.

Rice and other unmalted grains are notoriously hard to get these starches out of and converted into sugars. This usually requires a long 'cereal cooking' process of boiling the grains, but the process of 'puffing' this Jasmine Rice allows it to be used directly in the typical brewing process, resulting in a crisp and light contribution of subtle sweetness and a grainy finish

BREWING SUGGESTION: Brew with Saaz hops, Pilsner malt, flaked rice, and Jasmine puffed rice. Puffed jasmine lager or ale has a light floral aroma and is perfectly dry and refreshing.
